Gaspacho is a soup made of raw vegetables and served cold.  Gaspacho is widely eaten in Portugal and neighbouring Spain, particularly during the hot summers, as it is refreshing and cool.

To accompany we recommended a nice fried river fish or some slices of ham of Alentejo pork.

To drink, choose a very cold white or rosé wine from Mértola, of course.
